We Are Starting Soon. Here's What That Actually Means.

There is a specific kind of tension that comes when something you have been building quietly starts to feel real. Not pitch-deck real. Not whiteboard real. Actually, physically real — the kind where you hold a thing in your hands and realise it is closer to done than you thought.

We are in that stretch right now.

When we say 'starting soon,' we mean it in the most literal sense. The preparations are no longer abstract. There are kitchens involved. There are suppliers with names and delivery windows. There are things being tasted, adjusted, and tasted again. There is a location.

What 'soon' has cost us

Getting to 'soon' took longer than we planned — which is exactly what everyone who has done this before warned us would happen, and which we chose not to fully believe until we lived it. Food is unforgiving in a particular way. You can iterate your way through a software bug in an afternoon. You cannot iterate your way through a flavour that isn't right yet in the same timeframe. It takes what it takes.

We have reworked recipes that we thought were finished. We have gone back to suppliers we had moved on from because their ingredient turned out to be irreplaceable. We have thrown out timelines and rebuilt them. Every one of those decisions was frustrating at the time and obviously correct in retrospect.

What we are proud of

The thing we kept returning to, every time we were tempted to move faster than the product was ready for, was a simple question: would someone who loves great food think this is worth their time? Not worth trying once. Worth returning to.

We think we are there now. We think what we are about to put in front of people is genuinely good — not 'good for a new brand' or 'good for the price point', just good. That took the time it took, and we are not apologising for it.

What happens next

We will keep writing here as things happen. Not to build hype — we do not have the patience for that — but because we think there is value in an honest account of what it actually takes to start something like this. The gap between 'we are building a food brand' and 'here is the food' is a strange and difficult stretch. We have been in it for a while. We are almost through it.
